Ingredients You Need for Strawberry Freezer Jam
Ripe Strawberries: For the best flavor and sweetness, in season, ripe strawberries are a must. When strawberries are ripe, they are juicy and have a nice texture, which helps the jam come out just right—not too runny or too thick. Ripe strawberries also give the jam a bright color and a wonderful smell. Plus, they contain more pectin, which helps the jam set properly.
Sugar: An important ingredient! Sugar makes the jam sweet and helps preserve it. Sugar also helps the jam set by working with the natural pectin in the strawberries. Without enough sugar, the jam might not thicken properly.
Cornstarch: Cornstarch thickens the jam well without needing a lot of extra sugar. It also makes the jam less likely to turn out too firm or too soft, making it easier to get the perfect consistency.
Lemon Juice: The acid in lemon juice works with the natural pectin in strawberries to make the jam thicken properly. It also helps preserve the bright color of the strawberries and adds a slightly tangy flavor, which makes the jam taste even better.
