Easy Summer Pasta Salad
This Easy Summer Pasta Salad is quick, easy, and so flavorful! Filled with crisp peppers, creamy mozzarella cheese, delicate sundried tomatoes, and yummy Salami all topped off with a creamy Vinegarette that is seriously so good!
An easy pasta salad sometimes sounds like just the thing for a light lunch or to take along to a gathering. This pasta salad is one that you can throw together in just a few minutes!
It is light and refreshing. With simple and flavorful ingredients that aren’t over-the-top. You can always bulk it up by adding more veggies and meat!
Pasta Salad Ingredients

- Bowtie Pasta (Farfalle): This shape is so much fun and looks great. We will sometimes use penne, or Fusilli Pasta in this recipe. Any pasta will work!
- Fresh Mozzarella: This cheese is so soft and creamy! I love adding this to my pasta salads because it melts in your mouth and molds itself to the pasta, making it easy to eat.
- Sun-Dried Tomatoes: These give your pasta salad a rich and decadent flavor.
- Salami, Turkey Pepperoni, or other hard meat: For a little protein kick and some added flavor! We love turkey pepperoni in this recipe, but any pepperoni or salami will be delicious.
- Bell Peppers: Peppers give a little crunch to this salad!
- Ken’s Sweet Vidalia Onion Salad Dressing: THE BEST Dressing! Seriously so good, and it goes so well with all of the other ingredients.
How to Make Summer Pasta Salad
Making this pasta salad couldn’t be easier! The hardest part is cooking the pasta!!
- Cook the pasta according to the directions on the box, drain, and let cool.
- While the pasta cooks, cut the mozzarella into chunks, cut the pepperoni into small pieces, and chop bell peppers. Set aside.
- Once pasta is cooled, mix all ingredients, then refrigerate for one hour.
- Enjoy!

- 1/2 Bottle of Ken's Sweet Vidalia Onion Salad Dressing
Instructions
- Cook the pasta according to the directions on the box, drain, and let cool.
