German Pancakes “Popovers” Recipe

This light, fluffy, and exciting breakfast is easy to make with just 5 ingredients. German Pancakes are a family favorite because they are quick to put together, easy to make and they taste incredible.

What is a German Pancake?

German Pancakes (or Popovers) are made from a simple combination of flour, milk, eggs, sugar, and salt without any leavening agent. The ingredients are whirled in a blender and then poured into a baking dish or skillet over a bed of melted butter. The edges of the pancake puff up in the oven, then deflate slightly as it cools, creating a thick puffy crust and a dense eggy center, a texture more reminiscent of a British popover than a classic American buttermilk pancake.

They are also known as a Dutch Baby, which is typically cooked in a cast iron skillet.

This classic breakfast can be served with so many things! We like ours with a dusting of powdered sugar, but other toppings that would be great are:

  • Whipped Cream

The ingredients for these pancakes are simple. Be sure to scroll to the recipe card for exact measurements.

  • Butter: Every great breakfast has a bit of butter, but in this dish, the butter is the secret to the “POP”! Make sure to follow the directions for how to achieve the maximum Popover.
  • Eggs: For a fluffy and rich texture.
  • Flour: The base of the recipe, and what makes these pancakes cake-like.
  • Milk: For a consistent batter that is creamy.
  • Salt: Used in this recipe for flavor profile. We like to use Real Sea Salt.

How To Make German Pancakes

Cube Butter, place in a room-temperature 13×9 glass baking dish, and place dish in oven (don’t preheat oven beforehand).

Preheat oven and dish to 400°.

Blend Egg, Flour, Milk, and Salt for 30 seconds in a blender. Scrape the sides of the blender, and blend for 30 additional seconds.

Poor the batter into the preheated dish/melted butter right when the oven reaches 400° (to avoid burning the butter).

Bake at 400° for 20 min. (Do not open the oven during baking to maximize pop)

After baking, cut to serve and sprinkle with Powdered Sugar or other preferred toppings.

Ingredients

  • 6 Tablespoons Butter (for dish)
  • 6 eggs
  • 1 Cup Flour
  • 1 Cup Milk
  • Pinch Salt
  • Powdered Sugar for Dusting (optional)

Instructions

Notes

This recipe can be easily modified for smaller or larger groups/dish sizes by just keeping to the same Egg/Flour/Milk ratio. You should also slightly increase/decrease Butter volume when modifying, but butter volume is not as important.
